Maestra Talicia's Recipe: Sopa Fría

Need a refreshing recipe to wrap up the end of this summer? Well you’ll love this month’s Mexican recipe! This month’s recipe, Sopa Fria (pasta salad), is brought to you by our English teacher, Maestra Talicia. Generally, people eat this dish at parties or in the summer since it is a cold, quick dish to prepare. It is delicious, and children love it, so if you want to learn how to make it, keep reading!

INGREDIENTS (7-8 people):

  • Water to boil pasta

  • ½ tablespoon salt

  • 2 tablespoons of cooking oil

  • 2 packages of pasta (whole wheat elbows 400 g)

  • 3 apples

  • 1 can of whole kernel corn (410 g)

  • 1 can of fruit cocktail (850 g)

  • 2 boxes of table cream (500 ml)

  • 1 package of ham (290 g)

  • 1 package of cheese (173 g)

Put enough water in a pot to cover the pasta.  Add 2 tablespoons of cooking oil to the water.

Add ½ tablespoon salt and bring to a boil.

Once it starts boiling, add the 2 packages of pasta.Simmer for about 15-20 minutes.

When the pasta is cooked to perfection, remove it from the heat and drain it.

Peel the apples.Remove the core and chop them into small pieces. Place the pieces in a bowl.

Drain the corn and put it in the bowl.

Drain the fruit cocktail. Put the fruit in the bowl.

Chop the ham and put the pieces in the bowl. Chop the cheese and add it to the rest of the ingredients.

Add 250 ml of table cream to the ingredients and mix together.

Add all of the pasta in the bowl. Add the rest of the table cream to the ingredients and mix.

 Once all the ingredients are mixed, it is necessary to put the Sopa Fria' in the refrigerator for at least 1 hour.

Serve your Sopa Fria with your favorite drink!
