Recipe of the month: Mari’s Pastel de Galletas de Chocolate

This quick and easy no-bake pastel de galletas recipe is the perfect sweet treat for the summer months and a favorite amongst the chocolate lovers of Na’atik.

Ingredients

  • 10 strawberries

  • 1 can of peaches in syrup (480g drained)

  • 500ml single cream

  • 90g butter (at room temperature)

  • 60 chocolate cookies (e.g. Oreos)

Method

Wash the strawberries and cut them into slices.

Remove the peaches from the can and save the syrup to use later.

Cut the peaches into slices.

Pour the peach syrup and single cream into a bowl. Stir until combined.

Spread both sides of each cookie with butter, dip into the syrup-cream mixture and then place into a dish to form layers. Add a layer of the cookies, followed by some of the syrup-cream mixture and top with sliced peaches.

Repeat and end with a final layer of cookies topped with sliced strawberries.

Refrigerate overnight to allow the cake to set, then tuck right in!
